I wish every night could be pizza night, but not that delivery junk. I want someone to live in my house & make homemade pizza for me everyday! Breakfast, lunch, dinner, whenever I want! After pinning these great looking pizza bites on pintrest last week, I thought they would make a perfect dinner to get everyone in the kitchen to cook together. And I was right, I couldn’t believe that my JP made dough for me! Together we made the pizza dough, pesto, pulled apart leftover chicken legs & made a great dinner. But let’s not forget our smallest mess maker, I mean helper. Micah helped with getting varies things out of the fridge and supervising the kitchen from his chair.
The pesto pizza included tons of pesto, feta, chicken & mozzarella all on bisquick pizza dough. We ran out of regular pizza dough while making the pizza bites so whipped up a quick batch of bisquick pizza dough, which tasted like….biscuits. But it was actually very good together since this wasn’t a normal marinara kind of pizza, we called this our “fancy pizza”. It was just about falling apart as we ate it (nobody minded because it was sooooo good though), so next time I’ll be going with a more traditional pizza dough.
The pizza bites were awesome! I got the idea from Pennies on a Platter but we went with Hawaiian pizza bites (ham, pineapple & cheese) & Man pizza bites (steak & cheddar cheese), which were all served with marinara on the side for dipping. I plan to experiment more with the pizza bites, I just love stuffing things into bread!
